What is fruit puree?
The puree is a peeled and pitted fruit that is completely crushed and mixed. Purees are made of fruits that have a higher fiber ratio than their juice, such as peaches, apricots, apples, strawberries, plums, bananas, blueberries, etc.
Steps of preparing puree
To prepare the puree, first, to separate the soil, dust, leaves, etc that exists on the skin of the fruit, and also to remove the remnants of insecticides on the fruits, washing processes are implemented.
The washing procedure is such that the fruits are placed in a floating device to settle the soil particles, etc, and by injecting air into these vessels, shakes the fruits and washes them. At the same time, excess materials such as leaves, wood, etc, which are lightweight, float on the water, and are separated by overflowing water.
The fruits are then rinsed by a sloping lift and soaked with a shower and entered the next stage. At this stage, the skin and kernels of fruits that have kernels are removed during the procedure. Of course, it is worth mentioning that fruits that do not have kernels, such as bananas, strawberries, raspberries, chard, etc, do not enter the kernel stage and enter the mixing stage directly, where they are completely crushed and mixed by special mixers. And by the order, they will be packed in barrels, buckets, and single containers. Then, due to the lack of any preservatives and the lack of Heating and non-condensation, the puree is stored in special refrigerators at minus 18 degrees.
